Available in 3 variants:

  • Peppercorn – Manu’s classic peppercorn sauce, made with both black and green peppercorns. Prepared with onions and white wine, combined with a veal and beef glace. Pure cream is then added and reduced for depth and a peppery zing! Manu recommends succulent eye fillets to pair with this sauce. Delicieux!
  • Lamb & Rosemary – Manu’s traditional lamb and rosemary sauce, prepared by roasting lamb bones and a mirepoix of vegetables, before being reduced to a thick lamb jus. The sauce is finished with fresh rosemary for added flavour and aroma. Manu loves pouring this sauce over a beautiful lamb roast.
  • Mushroom – Manu’s take on a mushroom sauce that pairs perfectly with poultry and pork. Strong and full bodied, prepared with Porcini and Button Mushrooms, white wine, veal and beef glace and pure cream for a little bit of indulgence.
